In this version we can match the roof line from the existing mudroom and tie into the main roof. This would make for a nicer interior space but it would also be a heavier lift.

These are the early studies to see what you can do with adding a volume to the back of the house without cutting into the existing roof. This is tough to do because you get a very low ceiling height and not a big pitch on the roof for snow. This would probably also be the least intrusive/expensive option
